Some No-Bake Banana Goodness

There’s something so irresistible about a bunch of beautiful, bright, yellow bananas. They just command attention (at least in the kitchen), wouldn’t you agree?

Well, at least they do for me. So much versatility from such an affordable, delicious and nutritious treat! When I’m in search of some healthy comfort, the creamy texture of a banana paired with the intoxicating smell never fails to satisfy!

What’s even MORE attractive, however, is a recipe featuring bananas as its star ingredient. Co-starring dark chocolate, oats and walnuts? This is a keeper. Wait, did I mention that’s it’s no bake and vegan friendly? Too good, and too easy to pass up!

These bars are great as on-the-go treats, or as healthy alternatives to those processed store-bought granola bars. These guys have a great chewy texture which pairs wonderfully with the firm dark chocolate base. They are also very low in added sugar-in fact you could probably omit the scant amount I have added, according to your taste!


No-Bake Banana Walnut Dark Chocolate Oat Bars

INGREDIENTSbananas, walnuts, dates, oats, dark chocolate

Oat Mixture:

  • 1/2 banana
  • 1/2 cup oats
  • 1/2 cup whole walnuts
  • 1/2 teaspoon Nectresse (or 2 teaspoons sugar/sugar substitute)
  • 1/4 cup unsweetened shredded coconut (for garnishing)

Chocolate Base:

  • 4 squares 85% dark chocolate
  • 2 pitted dates

Mix banana, oats, walnuts, and sweetener in a food processor until well combined and some small pieces of walnut still remain. Remove mixture and form into 4 (or 5, depending on the size you wish to make) rectangular shaped bundles and freeze for around 10 minutes.

Meanwhile, melt the chocolate for 45 seconds in the microwave, then mix with dates in the food processor until very little date chunks remain. The mixture will get stuck to the side of the bowl making it difficult to process, however the mixture does not need to be perfectly smooth. Once mixed, remove the chocolate mixture and spread it out on aluminum foil, pressing down to make a 4 X 4 inch thin inch layer of chocolate. Freeze for about 10 minutes.

Once the oat mixture and tBanana, oats, walnuts, chocolate, dateshe chocolate mixture are both firm, place the bars on top of the chocolate layer, pressing down to ensure they stick together (but don’t squish them!). Cut along the edges of the bars, through the chocolate, to create uniformed bars. Discard any remaining chocolate pieces. Sprinkle with shredded coconut and enjoy!
